Our Story
My culinary journey began during one of the most difficult seasons of my life. When my mother passed away during my first year of college, I suddenly found myself needing to learn how to cook on my own. What started as a necessity quickly became a lifelong passion.
As I taught myself, I fell in love with the rich traditions of my New Orleans roots—Cajun, Creole, and Southern cuisine. Every recipe became more than just a meal; it became a way to honor my mother, stay connected to my family, and preserve the culture that shaped me.
As my skills grew, I began exploring restaurants everywhere I traveled. While I enjoyed discovering new places, I often found myself disappointed. Many dishes lacked the bold seasoning, warmth, and soul that I knew Southern food was meant to have. That’s when I realized something important: great food isn’t just about ingredients—it’s about creating an experience. It should comfort you, bring people together, spark conversation, and remind you of home.
My very first cookbooks were written by two incredible chefs I continue to admire today: Patti LaBelle and G. Garvin. I studied their recipes, cooked nearly every dish, and then began putting my own spin on them. Over time, I developed a style that honors traditional Cajun and Creole cooking while adding my own creative touch. Every recipe became an opportunity to celebrate my heritage while creating something uniquely my own.
Today, LaShae’s Southern Cuisine is more than a catering company—it’s the realization of a dream born from love, resilience, and faith. Every wrap, handcrafted sauce, refreshing drink, and catered meal is prepared with fresh ingredients, bold flavors, and genuine Southern hospitality. Whether I’m serving at a farmers market, catering a wedding, feeding a family gathering, or introducing someone to Cajun and Creole cuisine for the very first time, my mission is always the same: to make every guest feel welcomed, cared for, and at home.
